One of my many passions in life is to bring back high tea. Cups and saucers, doilies, cakes stands, ribbons, small-print floral tableclothsÂ… and most importantly, the delightful and sophisticated food that an authentic high tea promises. Mini smoked salmon and cream cheese sandwiches with their crusts cut off and sliced into perfect squares. Two-bite-sized scones (that is scones that you can eat in two mouthfuls), smothered liberally with strawberry jam and topped with a generous dollop of thick cream. I also think that anything miniature serves beautifully at high tea time. Miniature blueberry and ricotta tarts, strawberry and custard tartlets, miniature ginger pots, delightfully miniature lemon-meringue pies, the list goes on. Here are some ideas to get your high tea started.
