The best choc-chip cookies

Ingredients

115 grams butter

100 grams caster sugar

100 grams soft brown sugar

125 mils (1/2 cup) tahini

1 egg + 1 egg yolk

t tbsp vanilla extract

150 grams plain flour

1/2 tsp baking powder

1/2 tsp baking soda

250 grams chopped dark chocolate (or choc-chips)

flaked salt

Method

  • Ensure all ingredients are at room temperature.

  • Pre-heat a fan-force over to 160°C. 

  • Line baking trays with non-stick sheet or baking paper.

  • Sift flour with baking powder and soda and set aside. 

  • Cream butter, sugar and tahini well. Slowly add egg and vanilla. Continue beating well. 

  • Add flour mix and choc chips and fold in. Don't over mix at this step.

  • Place dessert spoon balls of the mix on your trays. Make sure you leave 2-3 inches between each to allow them to spread.

  • Bake for 10-12 minutes. They should be brown around the edges. 

  • While still hot, lightly sprinkle with salt flakes.
