Lady Grey Chocolate Cake
Ingredients
6 Lady Grey (or Earl Grey) tea bags
1 cup boiling water
120 grams butter
3 eggs (room temperature)
2 cups castor sugar
115 grams quality dark chocolate
2 cups plain flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup plain yogurt
Icing sugar
Method

Preheat your oven to 180°C (170°C if using fan-forced oven).

Grease a medium sized bundt pan with oil and dust with flour.

Brew the tea bags in the water 3 to 5 minutes and set aside to cool.

Melt the chocolate in a double-boiler and set aside to cool.

Beat the butter, eggs, and sugar well until fluffy.

Add the cooled chocolate.

Beat in the flour, baking soda, baking powder, yogurt, and brewed tea.

Pour into pan.

Bake 50 minutes or until a skewer inserted into the cake comes out clean. Remove from oven and let stand 15 minutes.

Turn out of pan and cool. Dust with confectioners’ sugar.
