Lady Grey Chocolate Cake



6 Lady Grey (or Earl Grey) tea bags

1 cup boiling water

120 grams butter

3 eggs (room temperature)

2 cups castor sugar

115 grams quality dark chocolate

2 cups plain flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 cup plain yogurt


Icing sugar





  • Preheat your oven to 180°C (170°C if using fan-forced oven).

  • Grease a medium sized bundt pan with oil and dust with flour.

  • Brew the tea bags in the water 3 to 5 minutes and set aside to cool.

  • Melt the chocolate in a double-boiler and set aside to cool.

  • Beat the butter, eggs, and sugar well until fluffy.

  • Add the cooled chocolate.

  • Beat in the flour, baking soda, baking powder, yogurt, and brewed tea.

  • Pour into pan.

  • Bake 50 minutes or until a skewer inserted into the cake comes out clean. Remove from oven and let stand 15 minutes.

  • Turn out of pan and cool. Dust with confectioners’ sugar.
